The Leiter am Waal serves freshly prepared dishes made from regional products, most of which are sourced from local farmers. A culinary journey through the Alps, including classics from South Tyrolean cuisine.

From ‘speck’ dumplings to ‘schlutzkrapfen’

You can choose between a Waaler marende (a cold meat and cheese platter) and classic South Tyrolean dishes such as excellent roast meat with roast potatoes, speck dumplings (a type of bacon) with coleslaw or schlutzkrapfen (semi-circular stuffed pasta). For those of you with a sweet tooth we also offer our famous apricot dumplings, traditional South Tyrolean poppyseed doughnuts and walnut ice cream with maple syrup. In the afternoon we serve home-made apple strudel or a buckwheat gateau with coffee… natural, and naturally simply good.

The products used in our kitchen are mostly sourced from local farmers, from people with whom the Bauer family has a relationship of trust. We consciously avoid using ingredients that do not come from the Alpine region because we firmly believe that regional and seasonal are not just a trend – they are a constant. The Leiter am Waal will take you on a culinary journey through the Alps and let you experience the natural variety of the four seasons.

Alpine dining with a special flair

At lunch and dinner time we prepare traditional Alpine dishes made from seasonal ingredients, as well as home-made cakes and coffee in the afternoon. All our food is served in an extraordinary atmosphere – in parlours decorated in the traditional Meranese style or underneath the arbour on the terrace – with a panorama view across the entire Adige Valley, the neighbouring mountain peaks and the vineyards surrounding the restaurant.
